1 white celery sprig 2 Reineta apples 1 boiled potato 1 boiled beetroot 4 tablespoons extra virgin olive oil 2 small lemons juice 1 boiled egg yolk Half teaspoon minced parsley Salt and pepper
Directions
Clean the celery. Peel the apples and core. Peel the boiled potato. Julienne, also the boiled beetroot. Mince the egg yolk. Beat the oil with the lemon juice, salt and pepper. Add the yolk and the parsley. Put the salad in the dishes and season with that mixture.
