Cherry sherbet
Time required:30 minServings:For 6 servings
Ingredients
3/4 kg Jerte cherries
150 g sugar
4 tablespoons water
4 tablespoons lemon juice
3 tablespoons currant jelly
4 tablespoons Jerte cherry brandy
Directions
Dissolve the sugar in water and simmer for 8 minutes. Clean the cherries, remove stems and bone. Add to syrup, stir and cook for 10 minutes. Add currant jelly. Remove from the heat, sprinkle with hot Jerte cherry brandy and burn. Mince and leave to cool. Curdle in the ice-cream freezer. Store in the freezer until served.
