Directions
Place the fruit in the bottom of a shallow ovenproof dish. Add the rice pudding, sprinkle the brown sugar over the top, place the dish under a pre-heated grill and grill for a few minutes until the sugar is bubbling. Decorate the top with a sprig of mint and serve.
