Reineta apple salad marinated with cocoa oil, with lapin and citrus fruit vinaigrette

Ingredients
Reineta apple salad marinated with cocoa oil, with lapin and citrus fruit vinaigrette
100 g powder cocoa
500 cl refined olive oil
3 Reineta apples (not fully ripe)
400 g citrus fruit
400 g lapin loin
Directions
For the cocoa oil

Mix 100 g cocoa powder with 500 cl of olive oil 0,4º and simmer for 20 minutes. Remove from heat and add raw Reineta apple slices making sure they are all covered by the oil. Marinate the apple for at least 2 hours.

For the citrus fruit vinaigrette

Mix 50 g of various citrus fruit rinds (orange, grapefruit, lemon, etc.) with 200 g of their juice and 300 cl of olive oil.

For the lapin

400 g lapin loin browned in the grill. Soak in the vinaigrette and reserve for 1 day. Then cut in fine chops.

Shape the apple slices as a fan and place the lapin chops on top. Season with a vinaigrette of citrus fruit and cocoa oil.
