Apples with potatoes and chicory
Servings:For 4 servings
600 g boiled potatoes
3 Golden apples
2 gherkins in vinegar
Salt and pepper
1 spring onion
2 tablespoons vinegar
2 teaspoons oil
4 chicory leaves
Peel the potatoes and the apples and boil in salted water for some minutes. Dice the apples, the potatoes, the gherkins and the spring onion. Put the chicory leaves in a dish with these minced ingredients. Mix well the salt, the pepper, the oil and the vinegar in a bowl. Sprinkle with this mixture all the ingredients and serve.
