Heat the oil in a pan and fry the
onion and garlic until soft. Cut the steak into cubes and add the chilli to the
onion and garlic and fry until brown. Mix togeether the beef stock and peanut butter and pour over the beef. Bring to the boil, stir in the
coconut until dissolved and simmer for 30 minutes. Stir in the rice,
pineapple and
banana and cook for a further 25 minutes, until rice is cooked. Serve with a selection of vegetables. Garnish with a sprig of parsley.
