2 small ogen or charentais melons 2 pink or yellow grapefruit, peeled, de-pithed and segmented 2 bananas, peeled and sliced diagonally 4 tablespoons pure apple juice Sugar to taste Matchstick strips of lemon peel to decorate
Directions
Halve melons decoratively and scoop out centre seeds. Scoop melon flesh into small balls, or cut into cubes, leaving the melon shells intact. Toss melon, grapefruit and banana in apple juice, adding a little sugar to taste, if necessary. Spoon back into the melon shells and decorate with strips of melon peel.
