Crystallized cherries

Ingredients
(about 1/2 kg)
450 g Jerte cherries
700 g sugar
Some drops carmine
Directions
Clean the cherries, bone and put in a covered pot with boiling water for 4 minutes, drain and put the liquid away. Put the cherries in a dish. Mix 2,75dl water with 175g sugar. Simmer until sugar is dissolved, add the carmine, boil and pour on the cherries. allow to set for 24 hours. The 2nd day, strain the syrup in a pot with 50g sugar and boil, stir. Pour on the cherries and allow to set for 24 hours. Repeat this for 4 more days. The 8th day, remove the syrup from the cherries and mix with 75g sugar. Heat and remove from the heat when it starts boiling. Add the cherries and simmer for 3-4min. Put in a dish and allow to set with the lid on for 48h. The 10th day repeat the same thing done in the 8th day and allow to set for 4 days. Drain the cherries and put on a grille to get dried.
This is the traditional way to glacé and candy fruit. This process is intended to substitute fruit water by the syrup. If we have not much time, the cherries can be cooked in a very thick syrup and when well-impregnated, put on some icing sugar and leave on a grille to get dried.
