Superb steamed mussels
Time required:30 minServings:For 4 servings
Ingredients
32 green-lipped mussels
4 shallots, diced
2 tablespoons each: balsamic vinegar, orange juice
1/4 cup water
3 Zespri kiwifruit, peeled and diced
1 tablespoons extra virgin olive oil
freshly ground salt and pepper to taste
Directions
Wash the mussels and scrub. Remove any beards. Place in a large saucepan with the shallots, vinegar, orange juice and water. Cover and steam for about 5 minutes, until the shells have just opened. Discard any that do not open.
Place into serving bowls. Strain the cooking liquid and add the oil. Sprinkle the mussels with kiwifruit, strained liquid and salt and pepper.
