Clean the
cauliflower. Separate the florets -cut off the tough end of the stem. Simmer the florets in salted water with the lid off. Once tender, wash the florets in cold water and rinse.
Then make a white sauce with butter, flour, cream and some water. Add the grated cheese, salt and the grated nutmeg. Put the
cauliflower in an ovenproof tray. Cover with the sauce and add two spoons of grated cheese and a few slices of butter. Allow to bake for a few minutes in the oven until light brown and serve.
