Cook the
potatoes in lightly salted water. Meanwhile, heat half the butter in a pan and fry the
onions until they are soft. Add the chicken and cook for a further 5 minutes. Stir in the
mushrooms, sweetcorn and tomatoes and season with salt and pepper. Cover and simmer on low heat for 15 minutes or until the chicken is cooked. Drain the pototoes, return them to the saucepan, add remaining butter and mash. To serve, divide the mashed
potato between two warmed plates and top with chicken.
This makes a light but nourishing main meal with a good mix of ingredients. It is quick and easy to prepare.
