Tie the meat and season. Peel the
potatoes, do not cut. Heat the oil in a casserole and fry lightly the meat, both sides. Remove and fry lightly the
potatoes in the same oil, do not stop stirring. Remove and put away. Sauté then the
tomato, add the pepper, 1/4 l water and a pinch of salt. Add the meat and the
potatoes, simmer for about 1 hour, turning from time to time. When almost cooked, peel the
apples, core and cut into medium pieces. Melt the butter in the pan, fry lightly the
apple pieces, both sides and put away. Remove the meat from the casserole, allow to cool, take the lid off, slice and serve garnished with
potatoes and the
apples.
