Peel the
apples, cut into pieces and sprinkle with the
lemon juice. Heat in a casserole with the sugar, cinnamon and a glass of consommé until soft. Whirl in the blender, add the remaing broth and boil. Remove from the heat, allow to cool and add the liquid cream. Put in a recipient allow to cool for 2 hours in the fridge. Before being served, sprinkle with the minced young onion.
