Cherries au gratin

Ingredients
200 g Jerte cherries
2 kiwi fruit
4 Alcázar sponge cakes
Grated lemon skin
A glass Jerte cherry brandy
Directions
Clean and bone the cherries, put in a bowl to macerate with Jerte cherry brandy. Put the sponge cake in 4 small dishes, and sprinkle with cherry brandy and juice. Peel the kiwis, cut into thin slices and put on the sponge. Put the cherries on and some carambola slices in the middle. Sprinkle with icing sugar and cook au gratin in the oven until lightly brown. Serve immediately. Some minced almonds can be also sprinkled.
