Ingredients
New York banana salad
250 g mixed salad leaves
225 g red cabbage, finely shredded
175 g carrot, peeled and grated
2 gherkins, coarsely chopped
10 cherry tomatoes, halved
2 bananas, peeled and thinly sliced
100 g wafer thin pastrami, shredded

For the dressing

2 tablespoons low-fat mayonnaise
4 tablespoons fat-free fromage frais
1 teaspoon coarse grain mustard
1 teaspoon poppy seeds
2 tablespoons strained lemon juice
Directions
In a large bowl, toss together the salad leaves, red cabbage, carrot, gherkins and tomato halves. Arrange into 4 individual serving plates and top with banana slices and pastrami. For the dressing, mix together all the ingredients and drizzle over each plate to serve.
