Zespri kiwi jam

10 Zespri kiwis, peeled and mashed
1/4 cup lemon juice
5 1/4 cups sugar
3/4 cup water
1 packet fruit powdered pectine
Mix Zespri kiwis with lemon juice and sugar in a bowl. Leave to settle for 30 minutes. Meanwhile, mix water and pectine in a small pot. Boil during one minute, stirring. Mix it with kiwis. Keep stirring for 3 minutes. Inmediately, ladle into sterilised jars leaving 1cm space at the top. Wipe clean with damp towel and cover with lids. Let stand for 24 hours at room temperature. Afterthat, store in freezer. Jam will also keep fresh in the refrigerator up to 3 weeks.
