Savoy cabbage soup
Servings:For 4 servings
Ingredients
1 onion, finely chopped
225 g pork or veal meat, minced
1 Savoy cabbage, shredded
ground black pepper
2 l meat stock
parsley stems
240 g rice
olive oil
salt
Directions
Pre-heat oil in a large saucepan. Add the onion and saute until golden. Make small meat balls and add to the onion and leave to cook until brown. Add the cabbage and season. When the cabbage is tender, add the meat stock together with the parsley stems and cover. Cook for about 30 minutes. Then, add the rice and cover. Allow to cook for a further 20 minutes.
