1 medium avocado olive oil 1 1/4 cup onion, julienned 1 1/2 cup sweet green pepper, julienned 1 cup cilantro 1 1/2 cup fresh tomato salsa 2 flour tortillas
Prepare the salsa in advance by combining all ingredients. Refrigerate. Lightly saute the onion and green and red peppers. Mince the cilantro and cut the avocado into 12 slices. Warm tortillas in the oven and fill with sauteed peppers and onions, cilantro, abocado slices and salsa. Fold the tortilla over and serve.
