Banana bread

Banana bread
225 g self-raising flour
A pinch of salt
100 g butter
175 g brown sugar
75 g raisins
1 egg, beaten
3 tablespoons semi-skimmed milk
2 ripe bananas, peeled and smashed
1/2 teaspoon vanilla essence

To glaze

1 tablespoon clear honey, warmed

To decorate

Slices of banana, mint leaves and grated orange rind
Pre-heat oven to 180ºC. Grease and line a ovenproof tin. Rub the flour and salt with the butter until it resembles breadcrumbs and mix in the sugar and raisins. Mix the egg, milk, mashed banana and vanilla essence to form a dropping mixture. Spoon the mixture into the loaf tin. Bake in the oven for 1-1/2 hours until top golden and bread springs back when pressed with finger. Leave to cool in cake tin. Slice before serving. Brush the glaze over the loaf, decorate as illustrated. This bread will freeze well.
