Cherry Diplomático [Sponge]

1/2 kg Jerte cherries
200 g sponge
3 tablespoons icing-sugar
150 g redcurrant jelly
2 tablespoons Jerte cherry brandy
Clean and bone the cherries. Mix in a bowl 1/2 glass water, 2 tablespoons icing-sugar and Jerte cherry brandy. Soak in that liquid 50g sponges and put in a deep dish forming a square. Spread 50g jelly and 1/3 cherries on the sponges.
Put a third layer of wet sponges, jelly and cherries. Cover with the remaining sponges and store in the fridge until served, sprinkle with icing-sugar. It can be served with hot chocolate or light custard.
