500 g skinned and boned lean white fish or salmon
1 small onion, diced
1 fresh or canned chilli, chopped
2.5 cm knob root ginger, grated
1cup cider or white vinegar
3 Zespri green kiwifruit
salt and pepper to taste
Directions
Cut the fish in bite-sized chunks. Place into a glass bowl. Combine the onion, chilli, ginger and vinegar and pour over the fish. Marinate in the refrigerator for about 4 hours or until the fish has a cooked appearance. stir occasionally.
Peel the kiwifruit and cut in 1.5 cm cubes. drain the fish and combine with the fruit. Season with salt and pepper.
