Clean the meat, remove the grease and dice. Mix the oil, the grated rind and the
orange juice, the bay, the herbs, salt and pepper. Stir and add the meat. Leave to macerate for 2 hours. Halve the bacon slices and wrap the bones prunes with them. Skewer the meat, combining with the cherry
tomatoes, the
apple and the other ingredients. Roast the skewers turning several times.
