Stir fry broccoli

1 tablespoon olive oil
320 g broccoli
1 teaspoon chopped fresh ginger
1 medium clove garlic, crushed
1 medium tomato, chopped
Wash the broccoli. Chop the ginger and the tomato. Pre-heat the olive oil in the pan or wok (Chinese bowl-shaped pan) and then fry the chopped ginger plus the garlic for 30 seconds. Add the broccoli and stir-fry for 3 to 4 minutes. Add the chopped tomato and continue to stir-fry for another minute and serve.
