Wild asparagus with garlic
Servings:For 4 servings
1 bunch wild asparagus
4 cloves garlic
1 slice fresh bread
1 teaspoon paprika
4 tablespoons olive oil
1 tablespoon vinegar
3 eggs
Wash and cut the asparagus, reject the most fibrous parts. Remove the thin layer from the garlic. Pre-heat oil in a pan and fry the garlic and the slice of bread and set aside. Saute the asparagus in the same oil. Mince the garlic and the bread and pour over the asparagus adding a little water. Season with salt and vinegar. Cover and allow to cook over gentle heat for a further 30 minutes. There must remain a little juice. Before serving, beat the eggs and pour over the asparagus and stir until scrambled.
