Halve the
watermelon horizontally nearly at the top. Scoop out the flesh of both sides. Remove the seeds and dice the flesh. Keep the shell in the fridge. In a bowl, combine the
watermelon, the
peach, the
grapes and
cherries. In a separate bowl, combine the
orange juice and rind, the
lemon rind, the
gooseberry syrup and honey and pour it in a saucepan. Allow it to cook. Once boiling is finished, pour it over the fruit combination and allow to rest for 5 minutes. Stir the mixture again and place into the fridge for 1 hour. Remove from the fridge and pour the mixture into the
watermelon shell and use the other half as a lid.
