Roasted beef salad
Time required:2 hServings:For 4 servings
Ingredients
2 1/2 tablespoons peanut oil
Fillet steak (about 500 g), trimmed of fat and at room temperature
ground black pepper
salt
1 small can chestnuts
1 red pepper, seeds removed and finely minced
3 fresh onions, washed and cut into small chunks
100 g snow peas
1/4 blanched peanuts
2 cups fresh bean sprouts
2 Zespri kiwis, sliced for garnishing

For spicy Zespri kiwifruit dressing:
3 kiwifruit
1 tablespoon lime juice
salt
1 hot red chilli
1 tablespoon chopped coriander
Directions
Heat a pot and add 1 1/2 tablespoon peanut oil. When the oil is hot, add the veal and cook one side. Sprinkle with black pepper, turn and put some pepper again. When it is well-cooked, season and put in a pan or oven dish. Roast at 200ºC for 10 minutes, turning just once.
Leave to cool, drain and put in the fridge. Pat dry with kitchen paper then slice thinly. Allow the juices to run off then stack the beef in a container, cover and refrigerate until required (use within 24 hours), bringing to room temperature before serving.
Prepare the sauce next. Peel the Zespri kiwifruit and chop finely. Puree half of it then transfer to a bowl with the chopped Zespri kiwifruit, lime juice and a pinch of salt. Cut the chilli down the length, remove the seeds then chop the flesh very finely and add to the bowl of Zespri kiwifruit with the coriander. Mix gently together.
Drain the chesnuts, cut in half if large, put them in a small pan, cover with water and bring to the boil. Boil 30 seconds, then drain and refresh with water.
Heat a wok over a medium heat with one tablespoon of peanut oil. Drop in the red pepper and white pieces of fresh onions and stirfry 2 minutes. Add the snow peas, green pieces of fresh onions and peanuts, stirfry a minute, then add the water chestnuts and continue stirfrying until the fresh onions have just started to wilt. Remove from the heat, sprinkle with salt and stir through the bean sprouts. Tip into a heated serving dish. Serve immediately with the Zespri kiwifruit sauce and the sliced beef arranged on a platter, garnished with sliced Zespri kiwifruit.
