To make the dressing, process vinegar, preserves, oil, mustard and pepper in blender or food processor until blended. Chill until ready to serve. Divide the romaine
lettuce among 6 salad plates. Place
watermelon dices on top of romaine and arrange the
orange segments around the
watermelon. Spoon dressing over the salad just before serving.
