Pre-heat oven to 200ºC, gas mark 6. Skin the fish. Place one third of the
tomatoes in the bottom of the dish and add the fish pieces, arranged over the
tomatoes. Put one spoonful of chopped
tomato on top of each piece of cod. Peel and slice the
avocado and arrange the slices over the fish. Spread the prawns over the
avocado. Add the remainder of the
tomatoes and then trickle the cream over the tops of the fish portions. Sprinkle on the Parmesan cheese to complete the dish. Bake in oven for 20 minutes or until the fish is cooked.
Broccoli or green beans go well with this dish or serve the fish with a mixed salad. Whichever way, this makes a healthy choice with a good combination of ingredients.
