Potato salad

1 kg solid cooking potatoes
4 tablespoons oil
3 tablespoons vinegar
250 ml meat stock
1 onion, chopped
1 tablespoon chives
Cook the potatoes, in their skins, in salted water. Once cooked, peel and thinly slice the potatoes. Make a vinaigrette with the rest of the ingredients and pour it on the potatoes. Let the salad soak in the vinaigrette for a while before serving.
