Cherry fritter

Ingredients
500 g Jerte cherries
For the sauce
2 eggs
1/4 l beer
150 g flour
2 tablespoons icing-sugar
Oil for frying
Directions
Put egg whites away and whip the yolks with beer and flour. Leave to rest for 30 minutes.
Clean the cherries (do not bone, leave their stem); drain on kitchen paper or a tea towel, so that they lose humidity. Beat egg whites to the soft peak stage with the icing-sugar and add to the fritter dough with encircling movements in order not to lose mass. Soak the cherries in the dough and fry in generous hot oil. Drain on a kitchen paper.
