Cranberry and walnut tart

Ingredients
250 g shortcrust pastry
30 g walnut pieces
2 large eggs
200 ml creme fraiche
80 g goats cheese, cut into small, thin slices
4 tablespoons ready prepared cranberry sauce
salt and pepper to season
Directions
Pre-heat oven to 190ºC, gas mark 5. Roll out pastry and use to line four individual flan tins. Spread the base of each pastry case with cranberry sauce. Layer the goats cheese and walnut pieces on top of the cranberry sauce. Beat the eggs, creme fraiche, salt and pepper together and pour the mix into the pastry cases. Bake for 25 minutes or until set.

Serve warm, with salad as a light meal or alone as a starter.
