Fruit salad in a watermelon
Time required:2 hServings:For 8 servings
Ingredients
1 watermelon of about 3 kg
1 1/2 teacup stoned cherries
1 can peaches in syrup, or 4 peaches, very ripe
250 g seedless black grapes
2 oranges
juice and grated rind of 1 lemon
1 tablespoon gooseberry syrup
2 tablespoons honey
Directions
Halve the watermelon horizontally nearly at the top. Scoop out the flesh of both sides. Remove the seeds and dice the flesh. Keep the shell in the fridge. In a bowl, combine the watermelon, the peach, the grapes and cherries. In a separate bowl, combine the orange juice and rind, the lemon rind, the gooseberry syrup and honey and pour it in a saucepan. Allow it to cook. Once boiling is finished, pour it over the fruit combination and allow to rest for 5 minutes. Stir the mixture again and place into the fridge for 1 hour. Remove from the fridge and pour the mixture into the watermelon shell and use the other half as a lid.
