Peel the
oranges, remove the white inner skin and julienne. It should weight about 150 g. Soak in very cold water so that it loses bitterness and allow to set in the lower part of the fridge for about 12 hours. Drain well and put in a casserole. Add the same amount/weight of honey and simmer for 30 minutes. Add the
almonds and the minced
pistachios, mix. Simmer for 15 minutes, do not stop stirring. Remove from the heat make some walnut-sized small balls. Allow to cool and run over sugar. Mince the
cherries and garnish the small balls.
