Shallots are available all the year round, although it is usually difficult to find, since it is not very common and not widely cultivated.
In Spain, shallots lack of commercial importance. They are scarcely cultivated, and it is not very usual to find them in the markets. In France, where it is widely known and highly appreciated, it is available all over the year, coming mainly from the domestic production, although it is only produced during the months of July and August. In this country, in 1995, the months of greater trade were August (9.5% of the total sales), September (11,5%) and October (9,5%). Imports did only take place from January until June, and the amount imported was very low.
