Mashed parsnips
Servings:For 4 servings
450 g fresh parsnips, peeled and sliced
50 g brown sugar or honey
2 tablespoons low-fat butter
2 tablespoons finely minced parsley
Steam or boil the parsnips in a saucepan with salted water until each slice pierces easily. Remove from water and drain. Add all the remaining ingredients and stir and blend to desired consistency.
