Vegetable paella

80 g rice
400 g green bean
400 g artichoke
400 g carrot
400 g tomato
200 g mushroom
80 g red pepper
200 g Brussels sprouts
200 g onion
80 g peas
olive oil
Cut all the vegetables, except the artichokes, into small pieces. Heat oil in a large skillet and saute all the vegetables. Cover with water and add the rice and the halved artichokes. Simmer for about 20 minutes, add more water if required. Remove from heat and leave to rest for a further 5 minutes.
