The chief recommended varieties according to Pavord are four: "Milan Red", "Milan White Forcing", "Tokyo Cross", " Golden Ball".
- "Milan Red": Red-coloured, highly resistant to winter conditions
- "Milan White Forcing": Early harvest, flat-topped roots.
- "Tokyo Cross": Fast maturation, small roots of white pulp. They may be spicate if they are sown before the summer.
- "Golden Ball": Tender compact roots of yellow flesh.
