Courgette is a source of pro-vitamin A carotenoids, vitamin C and folate. The antioxidant power of vitamin C may protect from several types of cancer, intensifying the immunological functions and helping in the absorption of iron and calcium. A higher consumption of folate helps to protect against cardiovascular diseases and cancer, specially colon and the uterus’ neck cancer. Folate takes also part in the mental functions and helps to keep children’s attention.

The most outstanding characteristic of courgettes is their great digestive power. Their continued consumption is highly recommended to decontaminate the organism and to protect the intestinal health.

Courgette provides with vitamins of the group B, A and C. However, vitamins belonging to complex B and C are dissolved in the water when the vegetable is cooked, so it is recommended not to throw this water.

Regarding minerals, the potassium content is quite important, greater than that found in pumpkins. There are also small amounts of iron, magnesium and phosphorus.

This vegetable is suitable to be included in diets for people with cardiovascular and kidney problems, as well as in case of hypertension, since it has a low content of fats and sodium.
