The different varieties of kohlrabi can be grouped according to the colour of the stem’s base: green varieties and red varieties, that are less cultivated.
White color: ‘White Vienna’, ‘Green Vienna’, ‘Castor".
Red color: ‘Pollux", ‘Purple Vienna’, ‘Kolibrí ".
Below are described the main characteristics of some of the most important varieties:
‘Green Vienna’: the tubercle has greenish skin and white pulp. It is a variety of early maturation, and it is used for spring and summer seeding.
‘White Vienna’: it has a paler color than the previous variety.
‘Purple Vienna’: the skin is purple and the pulp is white. It is recommended for late sowing and winter harvesting.
‘Rowel": it is a variety which was obtained recently, with better quality than the previous. It has a sweeter taste.
